When prepared correctly, greens rock.
Ingredients:
- Greens (collards, spinach, turnips, kale)
- One giant onion or several small ones
- Salt
- Pepper
- 3 Tbs of some kind of oil or butter
Optional:
- some kind of salty meat (bacon, salt pork, ham)
Vessel:
- Dutch oven (iron pot)
How-to:
- Dice onion(s)
- Cut up greens into roughly 2-inch squares
- Put oil/butter into pot
- Turn on stove medium-low heat
- Throw in onions when pot is hot
- Cook onions until they are translucent
- Throw in greens
- Add about 2 cups of water
- Put the top on the pot and let it steam/boil for about 10 minutes
- Stir everything up and add enough water to barely cover everything
- Throw in about a .5 tsp of salt and .5 tsp of pepper
- If you have meat, throw that in. If not, throw in another .5 tsp of salt
- Turn the heat to low
- Put the top on and cook for 3-4 hours
- Take the top off and let some of the water boil off until the greens are the way you want them
Try not to eat them all at one time, because if you do you won't have any for later.
